Choose an oil for the whole cooking situation. Its composition and condition, the heat level, time on the stove and any reuse all affect how it performs; is only one signal. For everyday cooking, use an oil suited to the method and treat steady smoke or a burnt smell as a cue to lower the heat.
Match the oil to the cooking method and control the heat. Smoke point is useful, but it is not the whole answer.
If the oil starts smoking steadily or smells burnt, move the pan off the burner, lower the heat and start again if needed.
